ITALIAN POTATO SKINS

INSTRUCTIONS:

  1. Preheat your oven to 400°F (200°C).
     
  2. Scrub the potatoes clean and pat them dry. Pierce the potatoes with a fork in several places and rub the skins with olive oil, Italian seasoning, salt, and pepper.
     
  3. Place the potatoes directly on the oven rack and bake for 50-60 minutes, or until the skins are crispy and the insides are tender.
     
  4. Remove the potatoes from the oven and let them cool slightly.
     
  5. Once the potatoes are cool enough to handle, cut them in half lengthwise. Scoop out the flesh, leaving about ¼ inch of potato on the skin.
     
  6. Increase the oven temperature to 450°F (230°C).
     
  7. Place the potato skins on a baking sheet. Sprinkle the insides with mozzarella cheese and Italian sausage.
     
  8. Drizzle marinara sauce over the cheese and sausage.
     
  9. Sprinkle with Parmesan cheese.
     
  10. Bake for 12-15 minutes or until the cheese is melted and bubbly.
     
  11. Remove from the oven and sprinkle with chopped basil.
     
  12. Serve the Italian potato skins hot, garnished with sour cream and chopped green onions if desired.
