Pink Sakura Mochi
Ingredients:
- 1 cup mochiko (sweet rice flour)
- 1/4 cup sugar
- 3/4 cup water
- A drop of red food coloring
- 1 can sweetened red bean paste (anko)
- Salted cherry blossoms (sakura) for garnish (optional)

1. In a microwave-safe bowl, mix mochiko, sugar, and water until well combined.
2. Add a drop of red food coloring to the mixture and stir until 3. the color is evenly distributed.
4. Cover the bowl with plastic wrap and microwave on high for 2-3 minutes until the mixture becomes translucent.
5. Stir the mixture and microwave for an additional 1-2 minutes until it forms a smooth dough.
6. Let the dough cool slightly before handling.

7. Divide the dough into small portions and flatten each piece into a circle.
8. Place a small amount of sweetened red bean paste in the center of each circle.
9. Fold the edges of the dough over the filling and pinch to seal, forming a ball or oval shape.
